Guaya’b is clean and smooth, with notes of toffee, roasted almond and lime. Washed processing and patio drying form part of the preparation of this coffee from the highlands of north-western Guatemala.
The Guaya’b cooperative is based near Huehuetenango in the Sierra de los Cuchumatanes. Its members include growers from the Popti’ Maya community. Grown at 1,600–1,800m, this coffee is Fair Trade and organic certified.
